Ingredients:
* 2 pounds jumbo shrimps, shelled and deveined, tail left on
* 1 large clove garlic, crushed
* salt
* juice of 1 lime or lemon
* 1/3 cup olive oil
* garlic butter, below
Preparation:
Use scissors to remove shells without disturbing tails. In a non-reactive bowl, combine crushed garlic, salt, lime juice, and olive oil. Put shrimp in bowl; stir to coat well. Cover and refrigerate for 2 hours. Thread shrimp onto skewers and grill 5 to 6 inches from coals for about 12 to 15 minutes, turning frequently. Remove tails if cooking under broiler. Components for Barbecued Shrimp
Shrimp: This recipe is suitable for both large and medium shrimp. I like bigger shrimp for grilling on skewers. To save time, buy shrimp that are peeled and deveined; I prefer them with the tails on. Defrost and drain frozen shrimp prior to usage.
Oil: The foundation of the shrimp marinade is olive oil, but any neutral oil can be used.
Garlic: These shrimp contain a strong punch of garlic – fresh garlic is preferable if available!
Seasoning: Herbs, a dash of lemon juice, and tomato paste enhance the taste of the marinade.
Butter: Opt for salted butter when available or include a dash of salt if using unsalted butter.
I use parsley, but if you have other fresh herbs such as basil or cilantro, they also taste wonderful in the garlic butter.
How to Cook Garlic Grilled Shrimp
- Mix all the ingredients in a bowl, stir to cover, and let marinate according to the recipe below.
- Skewer the shrimp onto sticks.
- Heat the grill to medium and cook shrimp skewers for approximately 3 minutes on each side.
- Pour garlic butter over the dish and serve.
Swift Suggestion
If you are using wooden skewers, I suggest soaking them to avoid them igniting on the grill. Put them in a shallow dish (I utilize a 9×13 pan) and let them soak as the shrimp marinates.
If you regularly prepare skewers, I suggest purchasing stainless steel skewers. Although I appreciate the dollar store for various products, I notice that the less expensive skewers tend to rust.
Ways to Serve
Skewers: Present these skewers on a bed of rice (or Roasted Potatoes) alongside a portion of grilled vegetables.
Tacos: Take shrimp without tails and transform them into shrimp tacos with your favorite toppings.
Salad: Place these skewers atop a crisp salad – or even better, a Caesar salad!

Do not soak the shrimp for more than 60 minutes. Excessive marinating can render the shrimp soft.
